Cottage Cheese Hand Pies with Apples (Baked in the Oven)

Preparation
Step 1
Prepare the ingredients for the dough. Use natural butter and cottage cheese without vegetable fats. Any fat content works (mine was 5%). Avoid curd with grains - it won’t form the right dough. Let the butter soften at room temperature.

To make the dough: place softened butter and sugar into a bowl. Mash together with a fork until well combined - no mixer needed.
Step 3
Add the egg and cottage cheese to the butter mixture and mash again with the fork until smooth.

You should get a uniform, creamy mixture.
Step 5
In another bowl, mix flour with baking powder and salt.
Step 6
Sift the flour mixture into the bowl with the cottage cheese base. Sifting helps remove impurities and aerates the flour, making the dough softer and fluffier. The exact amount of flour may vary.
Step 7
Knead the dough - first with a spoon, then with your hands. The butter will make it non-sticky and smooth. Once it forms into a ball, cover the bowl with plastic wrap and set aside while preparing the filling.

Prepare the filling. Choose large apples (or more if small). Any starch works - I used cornstarch. Cinnamon is optional.
Step 9
To make the apple filling: wash, core, and peel the apples, then cut them into small cubes.

Place the apples in a pan, add sugar, starch, and cinnamon.

Cook over low heat for about 5 minutes, stirring occasionally. If the apples are dry, you can add a bit of butter for a richer flavor.

Shape the pies. You can roll out the dough and cut circles, but I prefer dividing the dough into equal pieces (I got 16) and rolling each one out individually. The dough is soft and doesn’t need extra flour.

Place a spoonful of filling on each circle and seal the edges as you like.

Twist or pinch the seam to prevent it from opening during baking.

Place the pies on a baking sheet lined with parchment paper.

Beat an egg in a small bowl and brush over the pies for a golden crust.

Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, until golden brown. Adjust the baking time to your oven.

Remove the pies from the baking sheet. They’re delicious warm or cooled - perfect with milk, tea, or on their own. Enjoy!
