Cottage Cheese Filling for Crepes

Preparation
Step 1
Use the best-quality cottage cheese you can find - it determines the flavor. Any fat content works, but richer cottage cheese makes a tastier filling (though more caloric). It should not contain vegetable fats, as they affect taste.

I made the filling with raisins, but you can use any dried fruit - prunes, dried apricots, dried cherries, cranberries. Choose pitted dry fruits. Nuts, chocolate, candied fruit, or coconut flakes also work well. Or leave the filling plain. Rinse the raisins (or other dried fruit) and cover with boiling water so they soften. Let them sit for 10 minutes.

While the raisins soften, begin preparing the filling. Put cottage cheese into a bowl and add the egg. Instead of a whole egg, you may use two yolks. Add sugar and vanilla. I always add a pinch of salt to sweet dishes - it enhances the flavor.
Step 4
Mix everything. I used soft cottage cheese, so mixing with a spoon was enough. If your cottage cheese is grainy, blend it or press it through a sieve so the filling becomes smooth. If the cottage cheese is very dry, add a spoonful of sour cream or heavy cream.

Once the raisins have steamed well, drain the water, place them on a sieve, then pat dry with a paper towel.
Step 6
Add the raisins to the cottage cheese mixture and stir well so they distribute evenly. Taste the filling - I needed a bit more sugar, but adjust to your taste. The filling is ready. Use it to fill the crepes.
Step 7
Simply spread the filling on a crepe and roll it into a tube. You can also fold it into an envelope, triangle, or make a small pouch - many options.

Lightly pan-fry the filled crepes in butter and serve. Enjoy!
