Cottage Cheese Croissants (Rogaliki) in the Oven
Delicious, light, and budget-friendly sweet pastries! Cottage cheese croissants bake in just minutes. The dough is soft, airy, and slightly crumbly - perfectly balanced with the filling. You’ll need only about half an hour to make them, using ingredients you likely already have at home!

Preparation
Step 1
Start by preparing the dough. The butter should be cold, and the flour should be of the highest quality.
Step 2
Cut the cold butter into cubes, mix it with the flour, and rub it into fine crumbs. You can do this by hand or use a blender for faster results.
Step 3
In a separate bowl, whisk together the egg, sugar, and salt until smooth using a whisk or fork.
Step 4
Pour the egg mixture into the flour crumbs. Add sour cream and baking powder.
Step 5
Knead a thick, very soft, and elastic dough. Depending on the egg size and sour cream moisture, you may need a bit more flour. Don’t rush to add flour at first - the dough thickens as it absorbs moisture. If it’s still too wet after kneading, add 1-2 tablespoons of flour. Shape the dough into a ball.
Step 6
Prepare the filling. Use cottage cheese that’s not too dry (5-9% fat). You can replace regular sugar with vanilla sugar.
Step 7
Mix cottage cheese with sugar and mash with a fork until smooth.
Step 8
Roll out the dough into a circle about 2-3 mm (1/10 inch) thick.

Cut the dough into triangles.
Step 10
Place 1 teaspoon of cottage cheese filling on the wide edge of each triangle. Roll each one from the wide edge toward the point to form croissants.
Step 11
Arrange the pieces on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C / 350°F for 15-20 minutes until golden brown. I used top-and-bottom heat mode. Adjust baking time according to your oven. Enjoy!
