Preparation
Step 1
Prepare the necessary ingredients to make a delicious cottage cheese cake.

Crack 3 eggs into a large bowl and add 1/4 tsp salt.
Step 3
Add 150 g sugar and beat with a mixer until fluffy and pale.
Step 4
Pour in 120 g melted baking margarine or butter.
Step 5
Mix everything well until combined.
Step 6
In a deep bowl, place 250 g cottage cheese and 150 g sour cream.
Step 7
Add 1 tsp vanilla sugar.
Step 8
Blend until smooth and uniform.
Step 9
Add the cottage cheese mixture to the egg mixture in parts, mixing very well each time.

In a separate deep bowl, add 160 g sifted flour and 1/3 tsp baking soda.

Add 10 g baking powder to the flour.
Step 12
Mix the dry ingredients well.

Add 100 g coconut flakes and mix again until evenly combined.

Add the dry mixture to the wet base in portions, and add 60 g seedless raisins.

Mix everything together and knead into a batter of the needed consistency.

Spoon the batter into a silicone pan, greased inside with a small amount of vegetable oil, spread evenly, then let it rest for 15-20 minutes.

Bake in an oven preheated to 175°C / 347°F for 50 minutes, then reduce the temperature to 100°C / 212°F and continue baking for 10-15 minutes.

Remove the pan from the oven and let the cake cool slightly, then turn it out onto a plate.

Dust the top with powdered sugar to taste.
