Cod Fillet in a Multicooker

Preparation
Step 1
Any cod fillet will work for this dish - frozen block fillets or a fresh piece. Choose whichever is available. You can also vary the vegetables to taste.
Step 2
Rinse and pat dry the cod fillet. If using frozen fish, just thaw it in the fridge and drain the liquid - no need to rinse. Season the prepared fish with salt and pepper.
Step 3
Wash and dry the tomatoes. Slice them into rounds. Cherry tomatoes work well, but regular small or plum tomatoes are fine too.
Step 4
Peel the garlic and finely chop or press it. If your cloves are small, use a few extra.
Step 5
Rinse and dry parsley, then finely chop it. You can also use dill, cilantro, or a mix of herbs for a richer flavor.
Step 6
Combine the chopped garlic and herbs in a small bowl and mix well.

Lightly grease the multicooker bowl with vegetable oil. Place the cod fillet inside before adding the tomatoes and herbs.
Step 8
Spread the herb and garlic mixture evenly over the fish.

Lay the sliced tomatoes on top of the herbs and drizzle everything with a little olive oil.

Place the bowl into the multicooker. Set it to the “Stew” or “Bake” mode for 20-25 minutes (about 370-400°F / 185-200°C equivalent). Some models have a “Multicook” mode - use whichever you prefer. Around 20 minutes is usually enough for perfectly tender fish.

Serve the cod with tomatoes and herbs immediately. Enjoy your meal!
