Classic Meatless Carrot Patties with Semolina, Pan-Fried
Budget-friendly but so tasty - better than expected! These classic carrot patties with semolina will win you over. Sweet version is great for kids; savory is a lean alternative to meat patties with a side dish.

Step 1
How to make classic meatless carrot patties with semolina in a skillet? Prepare the ingredients. Wash the carrots well under running water with a brush. One tablespoon of semolina wasn’t enough for coating, so I added a couple more. This recipe is for sweet patties; if you want savory ones, omit the sugar and add salt to taste.
Step 2
Peel the carrots; a vegetable peeler works best - it removes a very thin layer of peel, which is practical and convenient.
Step 3
Cut the carrots into large pieces, put them in a pot, and cover with cold clean water.
Step 4
Cook the carrots over low heat. After it comes to a boil, cook for about 15 minutes, no longer. It’s better to slightly undercook than overcook - overcooked carrots become too loose and watery. To check doneness, pierce with a knife: if it goes in easily, the carrots are ready. Drain the water and let the carrots cool.
Step 5
Grate the cooked, cooled carrots into a bowl. Use a medium or fine grater. I don’t recommend a coarse grater - patties will be rough and the mixture may fall apart while mixing.
Step 6
Add sugar and salt to the carrots. Stir in 3 tablespoons semolina. For a savory version, you can add chopped herbs and minced garlic. Mix well. If you have time, let the mixture rest for 10-15 minutes so the semolina swells and binds everything better.
Step 7
Put the reserved semolina into a separate plate. Spoon the carrot mixture and shape round patties. Coat them in semolina and place on a board. From this amount of carrots you’ll get about 8 patties. I made 2/3 of a batch.
Step 8
Heat a skillet. Add oil. I usually use a nonstick pan so flipping is easy. If you use a regular pan, heat both the pan and the oil well - then the risk of sticking is minimal. Place the patties in the skillet.
Step 9
Fry over medium heat for about 5 minutes per side until golden. No need to cover with a lid - the carrots are already cooked, and a lid prevents a crisp crust.
Step 10
Remove the cooked patties from the skillet and serve right away. They’re especially good with sour cream.
