Classic Meatballs in a Skillet

Preparation
Step 1
Choose pork with a little fat - it will make the meatballs juicy. If the onion is large, one will be enough. Long-grain rice works best, but any kind will do.
Step 2
Grind the pork into mince using a meat grinder. Boil the rice in water until half-cooked. Don’t use raw rice - it will expand during cooking and stick out of the meatballs, turning them into “hedgehogs.”
Step 3
In a large bowl, combine the ground meat and boiled rice. Peel and finely chop the onion (you can use a chopper or grinder). Add it to the bowl with the meat.
Step 4
Crack one egg into the mixture. Peel and crush the garlic through a press. Season with salt and spices - paprika and dried basil work great, but you can use your favorites. Mix until smooth, then beat the mixture against the bowl to make it dense and uniform.
Step 5
Heat a bit of vegetable oil in a hot skillet. With wet hands, shape the mixture into round meatballs and place them in the pan.
Step 6
Sear the meatballs on all sides over high heat until golden brown.
Step 7
In a separate glass, mix tomato paste with water.
Step 8
Pour the tomato sauce over the meatballs and bring to a boil. Then cover with a lid, reduce the heat, and simmer for about 40 minutes.
Step 9
Turn the meatballs 1-2 times during simmering for even cooking. Add a bay leaf 10 minutes before the end.
