Preparation
Step 1
Mascarpone and eggs should be at room temperature, so take them out of the fridge in advance. The eggs must be very fresh. Start by making the cream. How to make mascarpone cream? Crack the eggs and separate the whites from the yolks. Do this as carefully as possible so that not a drop of yolk gets into the whites, otherwise they may not whip well. Place the yolks in a bowl and add the sugar.
Step 2
Beat the yolks with the sugar using a mixer or whisk until you get a light, creamy mixture.
Step 3
Add the mascarpone and beat with a mixer on low speed or with a whisk until smooth.
Step 4
In a separate bowl, whip the egg whites with a pinch of salt on high speed until stiff peaks form. Check if they are ready by turning the bowl upside down: the mixture should not flow out.
Step 5
Add the whipped egg whites to the bowl with the yolks and mascarpone. Add the vanilla extract and gently fold with a spatula until you get a smooth cream. Mix with careful movements from bottom to top, as if “burying” the whites, so as not to damage their airy texture.
Step 6
Prepare the base of the dessert, which is the biscuits. Brew a strong espresso in advance and let it cool. Add the cognac to the cooled coffee. Dip the biscuits into the coffee. Do not keep them in the coffee too long, no more than 5 seconds, otherwise they will become too soft!
Step 7
Place a layer of biscuits into a dish with high sides. You can also prepare the dessert in individual serving dishes, such as dessert cups.
Step 8
Spread a layer of cream on top.
Step 9
Add another layer of biscuits and cover again with cream.
Step 10
Dust the top with cocoa powder through a sieve. Place the dessert in the refrigerator for 3 hours. Serve the tiramisu, cutting it into portions, and decorate to taste with berries and a sprig of mint. Enjoy!
