Step 1
How to preserve fresh cilantro for winter? This simple recipe will show you how to do it quickly and easily. It requires only two or three ingredients - the key is to use young, fresh cilantro for the most fragrant and vivid result.

Carefully sort through the cilantro, removing wilted, yellow, or spoiled leaves and trimming off the roots. Check thoroughly for insects and dirt - both can ruin your preparation, and soil may contain botulism spores, which are dangerous. Wash the greens thoroughly, then dry completely on a paper towel. The cilantro must be absolutely dry.
Step 3
Wash glass jars thoroughly in hot water with baking soda, rinse, and sterilize them in any convenient way - in the microwave, oven, or over steam. For the microwave, pour a little water into each jar and heat on high for 5 minutes, then pour out the water and dry. Boil the metal lids for 10 minutes and dry them.
Step 4
Chop the dried cilantro as you normally would for a salad and pack it tightly into the jars up to the shoulders. Then pour in vegetable oil until all the herbs are fully covered. There should be no air pockets — otherwise, the mixture will spoil quickly. If desired, mix the oil with coarse, non-iodized salt before pouring it in. Use any refined oil; unrefined ones will overpower the cilantro’s aroma.

Store this cilantro preserve in the refrigerator on the lower shelf. Once opened, use the contents within a few days. Enjoy!
