Preparation
Step 1
I used only salt and pepper as spices, but feel free to experiment with your favorite seasonings.

Rinse the chicken fillet, pat it dry with paper towels, remove any films and fat, and finely chop the meat as if you were preparing it for khinkali or kebabs.

Place the chopped chicken into a deep bowl, add one egg, mayonnaise, salt, and pepper. Mix thoroughly until smooth.

Add flour and mix again until the chopped mixture is uniform. Adjust the amount of flour and mayonnaise if needed. The listed proportions are based on one medium chicken egg and flat tablespoons of flour. The balance of these ingredients determines the tenderness of the patties. Optionally, add grated cheese for extra flavor.

Heat vegetable oil in a frying pan. When the pan is hot, place an oiled cooking ring on it and spoon the mixture inside, flatten gently, and remove the ring. You can also form patties using a spoon if you’re not concerned with perfect shape.
Step 6
Once the patties are browned on one side, flip them and fry the other side until golden over medium heat. Cheese in the mixture adds a crispier crust. Cooking time depends on patty size, your pan, and stove type. From this amount of ingredients, you’ll get about 8 chicken patties. Serve them hot or cold. Enjoy your meal!
