Chocolate Prune Loaf Cake

Step 1
How to make prune loaf cake? Prepare the needed ingredients. The butter should be at room temperature, so take it out of the fridge ahead of time. Use large eggs. You can replace cognac with gin, rum, or similar alcoholic drinks. Use large pitted prunes. Use high-quality all-purpose flour.
Step 2
Rinse the prunes, pat dry, and remove pits if any. Cut the dried fruit into small pieces. I simply cut mine in half.
Step 3
Pour cognac over the prunes and let them soak for 20-30 minutes. If the prunes are very dry and firm, first pour boiling water over them and leave for 10 minutes. Then drain the water and pour cognac over the prunes.
Step 4
Chop the chocolate into not-too-small pieces. You can replace bitter (unsweetened) chocolate with dark chocolate.
Step 5
In a bowl, combine the softened room-temperature butter and sugar. Beat with a mixer until fluffy.
Step 6
Add the eggs one at a time, beating after each addition.

You should get a fluffy, smooth mixture.
Step 8
Add the sifted flour with cocoa and baking powder and mix with a mixer.

Add the prunes along with the cognac, the chopped chocolate, and mix again with a spatula. The prunes and chocolate should be evenly distributed through the batter.

Transfer the batter to a butter-greased loaf pan. My pan size is 21 × 11 cm (8.3 × 4.3 in). Bake the chocolate prune loaf cake for about 40 minutes in a preheated oven at 180°C (356°F). Exact baking time depends on your oven. I left the cake for another 10 minutes in the cooling oven.

Cool the finished cake, remove from the pan, and dust with powdered sugar if desired. Enjoy!
