Chicken Soufflé in the Oven

Preparation
Step 1
To make a dietary, low-fat soufflé, use chicken breast fillet. You can substitute thigh meat, but note that the calorie content will change.

Rinse the chicken fillet and pat dry. Trim off any fat. To help it cook faster, cut each fillet in half.
Step 3
Place the chicken in boiling salted water. Bring back to a boil and cook over medium heat for 5-7 minutes until lightly cooked and still tender. Remove the chicken from the broth and cut into smaller pieces for convenience.
Step 4
Grind the chicken through a meat grinder with a fine grid or blend it in a food processor.
Step 5
Separate the eggs into yolks and whites, making sure no yolk gets into the whites. The whites should be cold, and the bowl for whipping must be clean and dry. If these conditions are not met, the whites won’t whip properly. Keep the whites in the fridge while making the sauce.
Step 6
Prepare the sauce. You can replace milk with 10% cream - it will make the sauce smoother and richer, but also more calorie-dense.
Step 7
Melt butter in a pan over low heat. Add flour and stir quickly until combined.
Step 8
Pour in milk at room temperature. Simmer over very low heat, stirring constantly, for 2-3 minutes until thickened. If lumps form, strain the sauce through a sieve.
Step 9
Add the milk sauce, egg yolks, salt, and pepper to the ground chicken. Mix thoroughly until smooth.
Step 10
Whip the egg whites with a mixer until stiff peaks form.
Step 11
Gently fold the whipped egg whites into the chicken mixture.
Step 12
You should get a fluffy, airy, and slightly viscous batter.
Step 13
Grease a baking dish with butter. Pour in the chicken mixture and smooth the surface. Bake the chicken soufflé in a preheated oven at 180°C (350°F) for about 30 minutes, until golden on top and fully set. Baking time may vary depending on your oven.
