Preparation
Step 1
Place chicken in a pot. Add salt, pepper, minced garlic, grated ginger, half the chopped onion, curry powder, thyme, and stock cubes. Stir and cook on medium heat for 5 minutes to let the flavors absorb. Add a little water (about 1 cup) and let it simmer for 10 minutes.
Step 2
Blend the tomatoes, remaining onion, and chili with a little water until smooth. Pour the blended mixture into the pot with the chicken. Add 4-5 more cups of water or stock. Stir and bring to a gentle boil.
Step 3
Stir in the tomato paste to deepen the flavor and color. Let the soup simmer for 25-30 minutes until the chicken is tender and the soup is slightly reduced.
Step 4
Taste and add more salt, pepper, or chili if needed. The soup should be light but flavorful - not too thick.
