Chicken in a Jar in Its Own Juice

Preparation
Step 1
If you’re using a frozen chicken, thaw it first at room temperature. If it’s fresh, pluck, clean, and singe off any remaining feathers. Rinse the chicken and pat it dry with paper towels.

Cut the chicken into small, portion-sized pieces.
Step 3
Add salt and ground pepper to taste. I also added a bit of smoked paprika (for color) and 1 tablespoon of vegetable oil.
Step 4
Mix everything thoroughly and place the chicken pieces in a food container or a plastic bag to marinate. Leave in the refrigerator for at least 1 hour or up to 24 hours - the longer it marinates, the better the flavor.
Step 5
Peel the onions and garlic, rinse, and pat them dry.
Step 6
Slice the onion into thin rings or half-rings. Leave the garlic cloves whole or cut them into 2-4 pieces lengthwise, depending on preference.
Step 7
Wash and dry a glass jar thoroughly - it must be completely dry. Layer some onion rings, bay leaf, a few peppercorns, and garlic at the bottom. For extra aroma, add a sprig of parsley, dill, or basil.
Step 8
Place a single layer of chicken pieces on top.
Step 9
Repeat with layers of onion, pepper, garlic, and herbs.
Step 10
Add another layer of chicken, continuing until all ingredients are used. Finish with a layer of onion and garlic.
Step 11
Cover the top of the jar with aluminum foil, shaping it like a lid.
Step 12
Poke a few small holes in the foil with a toothpick.
Step 13
Place the jar into a cold oven (important - a hot oven may cause the glass to crack). Turn on the oven to 350–390°F (180–200°C) and bake for 1 hour.
Step 14
When done, turn off the oven and slightly open the door, allowing the jar to cool gradually.
Step 15
Carefully remove the slightly cooled jar - be cautious, it’s hot!
Step 16
Serve the chicken hot as a main dish, garnished with fresh herbs.
