Chicken Cutlet with Tomatoes and Cheese
Exceptionally delicious, juicy, simple, made from common ingredients! Chicken cutlet with tomatoes and cheese turns out incredibly tasty, with an appetizing topping of baked tomatoes and onions. This dish is quick to prepare for a family dinner or guests, and can be served with a side dish or on its own.

Preparation
Step 1
Choose medium-sized chicken fillets, preferably fresh and not previously frozen. Use any type of tomatoes and medium-sized onions. Pick any dry spices to your taste or a special chicken spice blend - I used khmeli-suneli. You can replace mayonnaise with sour cream or plain yogurt. Prepare a baking dish for the oven.
Step 2
Rinse the chicken fillets under cold running water and pat dry with paper towels. Slice each fillet lengthwise into two pieces, but don’t make them too thin. Cover each piece with plastic wrap and lightly pound it with a meat mallet - don’t overdo it, so the meat doesn’t tear. Lightly pounded fillets will turn out juicier and more tender.
Step 3
Season each piece with salt and spices on both sides, gently rubbing them in. If time allows, let the chicken marinate in the spices for 20-30 minutes.
Step 4
Preheat the oven to 350°F (180°C). Grease the baking dish with vegetable oil or line it with parchment paper. Arrange the prepared chicken pieces in the dish. Spread a bit of mayonnaise evenly over each fillet.
Step 5
Peel the onion, rinse, and pat dry. Slice into rings and place them evenly on top of each piece of chicken.
Step 6
Wash and dry the fresh tomatoes. Slice them into rounds and place them over the onions. You can also cut them into strips or half circles if preferred.
Step 7
Grate the cheese on a coarse grater and sprinkle evenly over each chicken piece. Place the baking dish in the preheated oven and bake for 15-20 minutes (depending on your oven).
Step 8
Serve the baked chicken cutlets hot. This dish can be served on its own (a great diet-friendly dinner if using sour cream instead of mayonnaise) or with a simple side dish - pasta or potatoes.
