Cabbage Soup with Pork (Shchi)

Preparation
Step 1
You can use any part of pork. For soup, it’s best to use pork on the bone - it gives the broth a deeper flavor.
Step 2
Pour water over the pork, place it on the stove, and bring to a boil. Remove the foam that forms on top. Simmer the pork for 1 hour until tender. Separate the meat from the bone, cut it into pieces, and strain the broth. Return the broth and meat to the pot and bring it back to a boil.
Step 3
Peel, rinse, and dice the potatoes. Thinly shred the fresh cabbage. Add both potatoes and cabbage to the boiling broth with the meat. Cook for 15 minutes.
Step 4
Meanwhile, prepare the vegetable sauté. Peel and rinse the onions and carrots. Grate the carrots and finely chop the onion. Heat some vegetable oil in a skillet and sauté the onion and carrot for 2-3 minutes.
Step 5
Dice the tomatoes and add them to the skillet along with a bit of tomato paste - it gives the broth a nice color. Sauté everything together for 3-5 minutes, stirring occasionally. Then transfer the sauté into the soup pot.
Step 6
Cook everything together for another 10-15 minutes. Season with salt and spices to taste. Remove the soup from heat, cover with a lid, and let it rest for a few minutes.
Step 7
When serving, sprinkle with fresh herbs. Enjoy your meal!
