Step 1
How do you make braised beef in a kazan on the stove so that it turns out soft and juicy? Very easily! First, prepare all the ingredients from the list. To get juicier meat, it is better to use fresh beef or veal. Besides salt and pepper you can add your favorite spices to taste. I used a bit of paprika and khmeli-suneli.
Step 2
Rinse the beef. Be sure to pat it dry with paper towels, otherwise excess moisture will prevent it from searing – it will start stewing right away. Cut the meat into medium-sized pieces. If you are using frozen meat, first thaw it properly on the bottom shelf of the refrigerator.

Peel the onion and slice it into half-rings.

Heat vegetable oil over high heat in a kazan. Add the beef and onion. Fry, stirring from time to time, for 5-8 minutes until a golden crust appears.
Step 5
When the meat is covered with an appetizing golden crust, sprinkle it with the spices, mix and fry for another 1 minute.
Step 6
Pour warm or hot water into the kazan, add bay leaves, salt, pepper and the spices. Reduce the heat to medium. Bring to a boil, removing any foam if it forms.

Then simmer for 40-50 minutes under a slightly ajar lid, occasionally stirring the meat. If all the liquid evaporates before the stewing time is up, pour in a little more hot water.

If after this time the meat is still tough, increase the stewing time by another 15–20 minutes or more.

Divide the braised beef among plates and serve with any side dish. I served it with oven-baked potatoes. Enjoy your meal!
