Beef Stroganoff with Sour Cream

Preparation
Step 1
The quality of the meat affects both cooking time and flavor. To make the meat tender and juicy, choose young beef (I used veal). Tenderloin or fillet works best. You can use sour cream of any fat content. Instead of olive oil, you may use any neutral vegetable oil.

Rinse the meat and pat it dry. Slice it across the grain into pieces no thicker than ½ inch (1 cm). Cutting across the grain breaks down fibers, making the meat softer and reducing cooking time. For extra tenderness, lightly pound each slice on both sides with a meat mallet.

Cut the prepared slices into thin strips.

Finely dice the peeled onion.

Heat two types of oil (butter and olive oil) in a skillet.

Add the prepared meat and sauté over medium-high heat, stirring occasionally, until lightly browned. The crust will help seal in juices, keeping the meat tender.

Add the chopped onion to the meat and stir.

Continue sautéing the meat with onions over medium heat, stirring occasionally, until the meat is half-cooked.

Sprinkle the meat evenly with flour, mix, then pour in hot water. Add salt and stir again. Cover and simmer the Stroganoff over medium heat for about 20 minutes.

Add sour cream, black pepper, basil, and herb mix to the pan, then stir. You can use any spices you prefer that go well with beef.

Simmer the Stroganoff with sour cream over low heat for another 15-20 minutes, until the meat is tender. Total cooking time depends on meat quality (animal age and cut).

Serve the beef Stroganoff with any side dish - mashed potatoes, pasta, or rice. Enjoy your meal!
