Bean Stew (Red Red)

Preparation
Step 1
You should use already cooker black-eyed beans, canned ones also work.
If you don't have fresh tomatoes, you can substitute with a can of chopped tomatoes.
Step 2
Heat oil in a pan over medium heat. Add chopped onions and sauté until soft and slightly golden.
Step 3
Add garlic, ginger, and chili - fry 1-2 minutes until fragrant. Stir in tomato paste, cook for 2 minutes.
Step 4
Add chopped fresh tomatoes and let cook 10 minutes, until thick. Add paprika, curry powder, salt, and pepper. Stir in the cooked beans.
Step 5
Add a splash of water if too thick. Simmer on low heat 10-15 minutes so the flavors blend.
Step 6
Peel ripe bananas and slice diagonally. Heat oil in a frying pan. Fry bananas slices until golden and caramelized. Sprinkle with a bit of salt.
Step 7
Serve a generous portion of bean stew topped with crispy fried plantains.
Perfect with rice, bread, or completely on its own!
