Bean, Carrot, and Smoked Chicken Salad
Amazingly delicious, quick, and made from simple ingredients - perfect for dinner! This bean, carrot, and smoked chicken salad is easy to prepare, and crispy homemade croutons fried with spices make it wonderfully zesty. You can serve it warm or cold, with or without mayonnaise, and even add grated apple for extra freshness!

Preparation
Step 1
Drain the liquid from the canned beans. Rinse the raw carrots well under running water to remove any dirt. You can use store-bought croutons or make your own from bread - I’ll be using homemade ones.
Step 2
Place the cleaned raw carrots in a pot of cold water, bring to a boil, and cook for about 20-25 minutes, until soft. Let them cool, peel off the skin, and cut the carrots into small cubes for the salad.
Step 3
To make croutons, cut bread into strips about 1.5-2 cm wide, then into cubes. You can simply toast them on a dry skillet or fry with a bit of vegetable oil. I prefer frying - the croutons turn out crispier and more aromatic. Lightly salt them and, for extra flavor, mix the salt with spices or dried herbs.
Step 4
In a large bowl, combine the canned beans and diced carrots.
Step 5
Cut the smoked chicken meat into small cubes and add it to the bowl.
Step 6
Add the croutons to the salad.
Step 7
Add a bit of minced garlic and dress the salad with mayonnaise. Mix everything thoroughly.
Step 8
Transfer the finished salad with red beans and smoked chicken to a serving bowl and serve. If you’re not serving immediately, don’t add the croutons yet - stir them in just before serving so they stay crispy. Enjoy your meal!
