Bavarian Apple Cake-Pie
Beautiful, original - a celebration every day! Bavarian apple cake-pie is a recipe that’s hard to classify: it bakes like a pie but has a sandy crust, creamy layer and apple-nut topping. Most importantly, it turns out incredibly delicious.

Preparation
Step 1
Prepare the ingredients. Start with the dough. Sift the flour to remove impurities and enrich it with oxygen - this helps the pastry rise better. Use good-quality natural butter without additives. Let it soften at room temperature.
Step 2
To make the dough, place the soft butter and sugar in a large bowl. Add vanilla if you like. Mash with a fork until smooth. A mixer is not necessary.
Step 3
Add the flour. Do not add all at once - start with two-thirds and adjust as needed. Mix until you get a smooth non-sticky dough. If it seems dry, add 1-2 tablespoons of cold water.
Step 4
Prepare a baking form (mine is silicone, 22 cm). To easily remove the cake, place two strips of parchment across the bottom. Press the dough into the bottom and sides in a thin even layer. Refrigerate while you prepare the filling.
Step 5
Prepare the filling ingredients. Use a plain dessert cream cheese such as mascarpone. Choose a jam with slight tartness - it balances the sweetness (I used cranberry). It should be seedless. Vanilla is optional.
Step 6
For the filling: combine the cheese and sugar, beat with a mixer until smooth. Add the eggs one at a time while beating. Mix until completely homogeneous.
Step 7
Prepare the apple topping. You may need more or fewer apples depending on size (I used four medium ones). Brown sugar adds a caramel note, but white sugar works. Any nuts may replace the almond flakes.
Step 8
Wash the apples, quarter them, remove the cores, peel, and cut into small pieces. Add sugar and cinnamon and mix. Adjust the amount of cinnamon to taste.
Step 9
Remove the chilled crust. Spread a thin layer of jam over it.
Step 10
Pour the cream filling over the jam and smooth it out.
Step 11
Evenly distribute the apples over the filling.

Sprinkle with almond flakes.
Step 13
Preheat the oven to 350°F (180°C). Bake 60-75 minutes until golden. Baking time depends on your oven. Cool the cake completely before removing from the form - the parchment strips help a lot.
Step 14
Slice and serve. Dust with powdered sugar if desired. Enjoy!
