Barbecue Pork Ribs on the Grill
Delicious, aromatic, incredibly juicy and appetizing! Barbecue pork ribs on the grill always turn out tender and soft, and the marinade is quick and easy. These ribs disappear from the table in moments! A wonderful recipe for outdoor grilling.

Preparation
Step 1
Start by preparing the meat. The ribs should be fresh - this guarantees tenderness and juiciness. If using frozen ribs, thaw them at room temperature. Rinse under running water and pat dry with paper towels.
Step 2
Separate the ribs. If they have very little meat, you can leave the whole rack intact. Mine had a good amount of meat and fat, so I cut them into individual pieces.
Step 3
Prepare everything for the marinade. Peel the onions. Rinse the tomatoes, onions, and herbs; pat dry.
Step 4
Slice the onions into medium-thick rings.
Step 5
Lay the ribs out on a flat surface. Season with salt, ground coriander, oregano, and black pepper. Flip and season the other side the same way.
Step 6
Slice the tomatoes into wedges and chop the herbs. Spread the onion rings over the meat. Crush the tomatoes and herbs with your hands to release aromatic juice, then add to the ribs. Add vegetable oil. Mix everything thoroughly and place in a container or bowl. Let marinate for at least 1 hour. The longer they marinate, the richer the flavor.
Step 7
Light up the grill. When the wood burns down and glowing coals remain, proceed. Place the ribs on a dry, clean grilling rack over the coals.
Step 8
Cook the ribs, turning them occasionally.
Step 9
Grill until fully cooked and nicely browned. Check doneness by cutting into one piece: if the juices run clear, the ribs are ready. Don’t overcook them or they will dry out. Mine took about 30 minutes to finish.
Step 10
The delicious ribs are ready! Serve hot with fresh vegetables, salads, or pickled sides such as lecho or assorted preserved vegetables. Enjoy!
