Baked Zucchini with Sausage, Cheese, and Tomatoes

Preparation
Step 1
Wash the zucchinis and tomatoes thoroughly to remove any dirt. Use any cheese you like - just make sure it grates easily.

I used a young zucchini with soft skin and undeveloped seeds. Slice it into ¾ inch (about 2 cm) thick rounds.
Step 3
Use any oven-safe baking dish - glass, metal, or ceramic. Grease it lightly with vegetable oil and arrange the zucchini slices in a single layer. Sprinkle lightly with salt.
Step 4
Grate the sausage and cheese on a coarse grater. Add mayonnaise and mix well. Set aside a small amount of grated cheese for topping.
Step 5
Spread the sausage and cheese mixture evenly over each zucchini slice.
Step 6
Slice the tomatoes into rounds and place them on top of the zucchini. Sprinkle the reserved cheese over the tomatoes. Bake in a preheated oven at 350°F (180°C) for 30-40 minutes. Adjust baking time according to your oven. During baking, the zucchini will release some liquid, which will mostly evaporate. The zucchini will become tender, and the cheese will melt and slightly brown.

Remove the baked zucchini from the oven, transfer to a serving dish, and serve hot.
