Baked Potato Zrazy with Ground Meat (Oven)

Step 1
How to make potato zrazy with ground meat? Prepare the necessary ingredients. You can use any ground meat: chicken or meat. I used a mix (pork and beef). The juicier the meat, the tastier the zrazy will be.
Step 2
Peel the potatoes (after scrubbing and rinsing them well). Cut each potato into 2-4 pieces depending on size. Bring water to a boil in a pot, add the potatoes, and bring back to a boil. Salt the potatoes and cook over moderate heat until tender. It’s important not to overcook them - otherwise they lose some starch and absorb water, making the potato dough wetter and harder to shape.

While the potatoes are cooking, make the filling. Peel and rinse the onion. Dice it finely.
Step 4
In a skillet with vegetable oil, sauté the onion, stirring occasionally, until soft. Keep the heat moderate so it doesn’t burn.
Step 5
Add the ground meat to the onion. Cook the meat with the onion, stirring often. Break up any lumps so the mixture becomes more uniform.
Step 6
Cook the meat until it changes color. At the end, season with salt and spices to taste, stir, and cook 1-2 more minutes. Let the filling cool.
Step 7
Drain all the water from the cooked potatoes. Mash the potatoes with a masher into a smooth purée, then let it cool.
Step 8
To cool the mashed potatoes faster, transfer them to a suitable bowl. The mash should be slightly warm, not hot, so the added egg doesn’t curdle.

Add the egg to the mashed potatoes and mix.

Add the flour and mix well.
Step 11
You’ll get a soft, uniform potato dough. It will be a bit sticky, so when shaping the zrazy, dust your hands with flour or grease them with vegetable oil.

How to shape the zrazy: form a not-too-thin patty from a portion of dough and place it on a floured surface. Make an indentation in the center.

Fill the center of the patty with the filling.
Step 14
Bring the edges together. Shape the zrazy like a stuffed bun, giving it an elongated shape.

Shape the remaining zrazy the same way. Place them on a baking sheet greased with vegetable oil. I lined the bottom with foil, but that’s optional.

In a small bowl, beat an egg with a fork until smooth.

Using a pastry brush, brush the tops of the zrazy with the beaten egg so they turn nicely golden while baking.

Bake in a preheated oven at 180°C (356°F) for 20-25 minutes, until browned. Adjust time and temperature to your oven.

Serve the potato zrazy hot as a main dish. Enjoy your meal!
