Preparation
Step 1
Choose boneless pork. Small potatoes are most convenient - you can simply cut them in half. I’m using red onion, but regular white onion works too. You can use cream of any fat content - the higher the fat, the richer and creamier the flavor.
Step 2
Cut the pork into large chunks, then season with salt and spices.
Step 3
Dredge each piece of meat in flour.
Step 4
Heat some vegetable oil in a hot frying pan and fry the floured pork pieces over high heat until golden brown.
Step 5
Peel and slice the onion into half rings.
Step 6
Peel the potatoes. If using young potatoes with thin skin, just scrub them clean with a brush or knife. Cut the potatoes into large pieces and, just like the meat, fry them over high heat for a few minutes until golden. Sprinkle with turmeric, paprika, and salt.
Step 7
Mix the meat, potatoes, and onions together, then transfer everything into a baking dish. I use a ceramic dish, but glass or metal ones work as well.
Step 8
Pour the cream evenly over the mixture.
Step 9
Cover the dish with foil and place it in a preheated oven at 180°C (355°F) for 40-45 minutes. Cooking time may vary depending on your oven.
Step 10
About 10 minutes before finishing, remove the foil to let the top brown slightly. The pork and potatoes should have a beautiful golden crust. Remove from the oven and serve hot.
Step 11
Enjoy your meal!
