Baked Eggplants with Vegetables and Ground Beef
A delicious, beautiful, and very aromatic dish! Baked eggplants with vegetables and ground beef are a kind of casserole, visually similar to French ratatouille. However, it’s cooked with meat and in a slightly different way. The result is a hearty meal for a family lunch or dinner.

Step 1
How to cook baked eggplants with vegetables and ground beef: Measure all ingredients. Wash the vegetables thoroughly and pat dry with paper towels. You can prepare the ground meat yourself or buy ready-made. The recipe uses beef, but you can choose any other or mixed type. Peel the tomatoes by pouring boiling water over them.
Step 2
Slice the washed eggplants into even circles about ½ inch (1–1.2 cm) thick. Transfer them to a suitable bowl, sprinkle with salt, mix, and leave for half an hour. During this time, the eggplants will release their bitter juice, which should be drained. Then rinse and pat dry.
Step 3
Finely chop the onion. Divide the chopped onion into two equal parts.
Step 4
Mix one part of the onion with the ground beef, salt, and black pepper. Stir well.
Step 5
Set aside the second part and combine it with finely chopped chili pepper and diced bell pepper. These vegetables will be used to make the sauce.
Step 6
Heat vegetable oil in a skillet and sauté the onion.
Step 7
Add the bell pepper and chili pepper to the onion. Sauté everything for another 5-7 minutes, stirring.
Step 8
Add chopped tomatoes and mint to the pan. Continue stewing for another 5-7 minutes.

At the end of cooking the sauce, add finely chopped greens, salt, and ground black pepper to taste. Stir.
Step 10
Spread half of the tomato sauce on the bottom of a large skillet or baking dish.
Step 11
Arrange the eggplant slices on top, alternating them with layers of ground beef - add beef between the eggplants.

Pour the remaining sauce over everything. Add a little water if needed. Bake in a preheated oven at 355-375°F (180-190°C) for 40-45 minutes. Adjust the time depending on your oven.
Step 13
Remove the finished dish from the oven. Sprinkle with a small amount of chopped herbs and garlic slices. Cover and let it rest for about 30 minutes so it absorbs the aromas of herbs and garlic. Serve the Turkish-style eggplants with ground meat as a main dish or with a side, such as noodles. Enjoy!
