Preparation
Step 1
You can use milk of any fat content. Adjust the milk-to-water ratio to your liking - or cook the porridge entirely with milk if preferred. I use 2% milk and a little water.
Step 2
Pour the milk and water into a small saucepan. Add a pinch of salt and 1-2 tablespoons of sugar (adjust to taste). Stir and bring to a boil over medium heat, making sure the sugar dissolves completely.
Step 3
While the milk is heating, rinse the wheat grits several times in water, then drain completely using a fine sieve. Let all the water drip off.
Step 4
When the milk starts boiling, add the rinsed wheat grits and stir. Cook for about 10 minutes, stirring constantly so the milk doesn’t form a film on top.
Step 5
By this time, the grits will have expanded noticeably. Remove from heat, cover the pot, and let the porridge rest for 10–15 minutes. You can leave it on the stove (off heat) or wrap the pot in a towel to keep it warm.
Step 6
The porridge will absorb the remaining milk and thicken. The longer it stands, the thicker it becomes. If you prefer a thinner texture, stir in some hot milk.
Step 7
Serve the cooked porridge in bowls. Optionally, top with a knob of butter, fresh berries, or a drizzle of honey. A simple, delicious, and healthy breakfast for every day!
