Preparation
Step 1
How do you make apricots in syrup for winter without sterilizing? Prepare the necessary ingredients. Sort the apricots, removing any bruised or spoiled fruit. Wash them under running water, then dry them with regular or paper towels. Cut each apricot in half and remove the pits. Only after that should you weigh them. The recipe is for 3 kilograms of prepared fruit, about 6.6 pounds.
Step 2
Bring 2 liters of water, about 2.1 quarts, to a boil in a large enameled basin. Then add 800 grams of sugar, about 4 cups, and stir until it is completely dissolved.
Step 3
Squeeze the juice from half a lemon into a suitable bowl.
Step 4
Place the prepared apricots into the basin with the boiling water.
Step 5
Pour the lemon juice you squeezed earlier into the basin with the apricots.
Step 6
Stir the apricots in the basin with a wooden spoon and cook them for about 7 minutes.
Step 7
Carefully arrange the apricots in sterile jars, making sure no syrup gets into them. How do you sterilize jars? You can place jars with a small amount of water in the microwave for 5-7 minutes. You can also sterilize them in the oven at 100°C (210°F) for about 30 minutes, hold them over steam, or pour boiling water over them. It is enough to boil the lids for 10 minutes.
Step 8
Fill all the jars three-quarters full with apricots, leaving room for the syrup.
Step 9
Cover all the jars of apricots with sterile lids.
Step 10
Bring the syrup in the basin to a boil once again, then pour it hot into all the jars right up to the top.
Step 11
Seal the jars very well and tightly with the lids.
Step 12
Turn the jars upside down and set them on their lids. This way you can check whether the jars are sealed tightly; if not, syrup will begin to leak out. Leave the jars in this position until they are completely cool; at the same time, the lids will be additionally sterilized. You can also cover the jars with a blanket.
Step 13
Put the cooled jars away for storage in a cool, dark place.
Step 14
From this quantity of ingredients, I got 5 one-liter jars of apricots.
