Apple Skillet Cake (No Oven)
Soft, fluffy, with a caramel flavor! This apple skillet cake is cooked on a regular stovetop. Perfect when you can’t bake. The batter takes minutes, apples caramelize as you mix, and the whole thing is fast.

Step 1
How to bake an apple cake in a skillet? Prepare the ingredients. All batter ingredients should be at room temperature, so take them out of the fridge beforehand. Choose apple varieties that hold their shape when heated.
Step 2
First, prep the apples. Wash and pat dry. Peel the apples, cut into quarters, remove the cores, and cut into fairly large chunks. My apples softened a lot during cooking; without the peel they turned into purée, so I redid it and left the peel on. Zest the lemon and squeeze 1 tbsp of juice.
Step 3
Use a thick-bottomed skillet so it retains heat and the cake cooks through. Set it over low heat. Add the lemon juice, butter, and half the sugar. Stir and wait until the sugar dissolves.
Step 4
Add the apples to the sugar mixture and stir. Cover the skillet and cook the apples for about 5-10 minutes, depending on the variety. Stir them once.
Step 5
While the apples cook, make the batter. Crack the eggs into a bowl. Add the remaining sugar, milk, lemon zest, semolina, flour, and baking powder.
Step 6
Mix everything well. Pour in the vegetable oil.

Stir until completely smooth. The batter should be like pancake batter - thick but still pourable.
Step 8
The apples should be ready by now. Sprinkle with cinnamon and stir (skip if you don’t like cinnamon). Pour the batter over the apples and spread it evenly with a spatula.
Step 9
Cover the skillet, reduce heat to the lowest setting, and cook for 30-40 minutes. Check doneness with a toothpick - insert and pull it out; it should come out clean, without wet batter.
Step 10
While hot, immediately invert the cake onto a plate, apples side up. Otherwise it may cool and stick. Serve warm or cold.
