Apple Pie with Sour Cream Filling

Preparation
Step 1
Choose good-quality natural butter. Freeze it for about 2 hours before cooking - it should be very firm for easy grating. I replaced the mayonnaise with the same amount of sour cream (20–30% fat).
Step 2
Sift flour into a mixing bowl to aerate it. Add baking powder, vanilla sugar, a pinch of salt, and sugar. Mix well so the dry ingredients are evenly distributed.
Step 3
Grate the frozen butter directly into the bowl. To prevent it from melting, wrap it in a bag or lightly coat it with flour.
Step 4
Rub the butter and flour mixture with your hands until it resembles crumbs. Work quickly - the colder the butter, the better the crust.
Step 5
Add the egg and sour cream (and mayonnaise if using). Mix first with a spoon, then knead by hand until smooth.
Step 6
Form a dough ball, cover with plastic wrap, and refrigerate for 30 minutes.

Meanwhile, prepare the filling. Use medium-sized apples. Brown or white sugar both work - brown adds a caramel note. Add cinnamon or substitute with vanilla to taste.
Step 8
Wash, peel, and core the apples, then cut them into slices.
Step 9
Place the slices in a dry nonstick pan. Add sugar and cinnamon. Cook over low heat for about 5 minutes until the apples soften slightly and release their juices. Stir a few times - the filling is ready.

Prepare the cream mixture. Use rich, natural sour cream. You can replace powdered sugar with regular sugar and potato starch with double the amount of corn starch.

In a bowl, combine sour cream, egg, powdered sugar, and starch.

Whisk until smooth and creamy - the filling is ready.

Remove the dough from the fridge. Cut off one-third for decoration and roll out the remaining two-thirds on parchment paper into a circle. If sticky, roll it between two sheets of parchment.

Place the dough into a 20 cm (8-inch) springform pan, shaping the edges into sides. Since the dough contains butter, greasing the pan isn’t necessary.
Step 15
Pour the sour cream filling over the dough. Arrange the apples on top and drizzle them with the caramelized syrup from the pan. Spread evenly.

Fold the dough edges slightly over the filling. Use the remaining dough to decorate - make a lattice or cut shapes like flowers or leaves.

Preheat the oven to 350°F (180°C), bake for 40-45 minutes until golden brown. Remove from the oven and let cool before taking it out of the pan.

Slice and serve with tea or coffee. Once cooled, the pie cuts well and holds its shape. Enjoy!
