Preparation
Step 1
You can use any kind of apples, but sweet-and-tart varieties work best. Sift the flour through a sieve to aerate it.

In a large bowl, mix the flour with a pinch of salt, then add the chopped butter. Rub the butter into the flour with your hands until you get a crumbly texture.

Pour in cold water and knead the dough. You may need more or less flour - focus on the texture. The dough should be soft and not sticky. Cover it with plastic wrap and refrigerate.

Meanwhile, prepare the apple filling. Peel the apples, remove the cores, and slice them thinly.

Roll out the chilled dough on parchment paper into a thin round about ¼ inch (0.5 cm) thick. Arrange the sliced apples evenly across the dough, leaving the edges uncovered. You can also add raisins, cherries, or raspberries for a different flavor.
Step 6
Fold the dough edges over the apples and gently press down. You can seal the edges with a fork. Sprinkle sugar over the apples and top with a few pieces of butter. Bake the galette in a preheated oven at 350°F (180°C) for 40-45 minutes. Adjust the time based on your oven.

When the galette is lightly browned and the apples are soft, remove it from the oven and brush the hot surface with apricot jam for a beautiful caramel glaze.
