American Pumpkin Pie with Stewed Pumpkin Purée and Sweetened Condensed Milk

Preparation
Step 1
How to bake a classic American pumpkin pie? Add salt to the flour and cut the cold butter into the flour.

Add cold water mixed with lemon juice.
Step 3
Form the dough into a ball and refrigerate for 30-40 minutes.

Roll it out.

Place it in a pan, shaping the bottom and sides.

Bake for 12 minutes with pie weights in an oven preheated to 392°F (200°C), then 6 minutes without the weights.

Grate fresh pumpkin and stew it in a skillet until tender and the liquid evaporates; salt it during cooking.

Blend the pumpkin into a purée.
Step 9
Add eggs, sweetened condensed milk, and spices, and mix.
Step 10
Spoon the filling onto the crust.

Bake for about 40 minutes at 347°F (175°C).
