Almond florentines
Delicate, crisp florentines made with almonds and orange zest, then dipped in chocolate. A stunning homemade treat that's both elegant and irresistibly delicious.

Preparation
Step 1
Preheat the oven to 200°C. Line and very lightly grease three baking trays.
Step 2
To make the florentines, place the butter, sugar, and golden syrup in a saucepan and heat gently until the sugar has fully dissolved and no granules remain. Remove from the heat and stir in the flour, almonds, and orange zest until thoroughly combined.
Step 3
Spoon teaspoon-sized mounds of the mixture onto the trays, placing six on each and leaving plenty of space for spreading. Bake for 8 minutes, or until the centres are light golden and the edges slightly darker. The biscuits will be very fragile while hot, so leave them to rest for about 5 minutes before moving.
Step 4
Using a palette knife, carefully transfer each florentine onto a wire rack to cool completely. Once cooled, they are ready for dipping.
Step 5
Melt the dark chocolate and white chocolate in separate bowls, either by placing them over pans of gently simmering water (making sure the bowls don’t touch the water) or microwaving in short bursts. Ensure the bowl of dark chocolate is deep enough for dipping. Dip florentine into chocolate to cover half of it.
Step 6
Once the chocolate has firmed up, they’re ready to enjoy.
