Step 1
First, you need to roast the vegetables. Prepare the eggplants and bell peppers. Choose large, juicy, and fleshy peppers - red or orange ones work best. When the charcoal in the grill has burned down to embers, place the vegetables on a clean, dry grate and roast them over medium heat.
Step 2
Turn the peppers and eggplants frequently so that they roast evenly on all sides.
Step 3
Cook until the skins of the peppers and eggplants darken and char slightly. The roasting time varies depending on the size of the vegetables and the heat of the coals.
Step 4
Transfer the roasted peppers and eggplants to a deep bowl.
Step 5
Cover the bowl tightly with plastic wrap and let the vegetables steam for 20-30 minutes. This will make peeling them much easier.
Step 6
Peel the skin off the eggplants. For the peppers, remove the core with seeds and peel off the skin.
Step 7
Finely chop the eggplants and peppers with a sharp knife. If you have a large batch, use a meat grinder with a coarse plate. You can also use a blender for a smoother purée-like consistency.
Step 8
Heat some neutral vegetable oil in a skillet. Add the chopped peppers and eggplants, season with salt and sugar to taste, and cook over medium heat until some of the liquid evaporates.
Step 9
Add pressed garlic and a mix of ground peppers. If desired, pour in a small amount of vinegar. Taste and adjust seasoning as needed.
Step 10
Transfer the prepared Aivar to a clean jar and refrigerate it for at least one night to let the flavors blend.
